Food...







I wanted to share some recipes with you...  This weekend I tried a Salt Kissed Buttermilk Cake and oh my...so yummy!  And one of our favorites...Roasted Corn and Feta Salad.  It is a recipe that I came up with a couple of summers ago and is great with fresh in season ingredients!  

 Roasted Corn and Feta Salad 
1 ear of corn...clean and cut off kernels
1 tomato
1/2 block feta cheese...crumbled (about 2 oz or so...)
1/2 cup chopped walnuts...toasted 
one small head of lettuce...I love this salad made with mache greens :)
1 lemon...juiced
extra virgin olive oil...aprroximately 1/4 cup or so...
salt/pepper...to taste

Okay...take the corn kernels...place in a hot saute pan with a little EVOO.  Quickly roast them/saute them... and season.  Wash greens and place in bowl.  Top with the warm corn, feta, walnuts,  and chopped tomato.  Pour lemon juice and olive oil over salad greens.  Season once more.  Enjoy!!!
